​Curried Lentil, Tomato, and Coconut Soup

Ingredients: 

• ¾ cup red lentils
• 2 Tbls. coconut oil
• 1 Onion
• 2 garlic cloves
• Ginger
• 1 Tbls. medium curry powder
• ¼ tsp. crushed red pepper flakes
• 1 14.5 oz. can crushed tomatoes
• ½ cup of cilantro
• Salt & Pepper to taste
• 1 13.5 oz. can unsweetened coconut milk (you can use any milk of your choice)
