Curried Lentil, Tomato, and Coconut Soup

Ingredients:

¾ cup red lentils
2 Tbls. coconut oil
1 Onion
2 garlic cloves
Ginger
1 Tbls. medium curry powder
¼ tsp. crushed red pepper flakes
1 14.5 oz. can crushed tomatoes
½ cup of cilantro
Salt & Pepper to taste
1 13.5 oz. can unsweetened coconut milk (you can use any milk of your choice)

Grandma's Salmon Pea Wiggle

My Grandmother used to cook this every time we went to visit in Vermont.

Ingredients:

3 cups whole milk
1/4 cup of butter
3 Tbsp. flour
2 cans (14.75 oz) salmon or fresh salmon
1 can (15 oz) baby peas
3 pinches of salt and pepper

Kung Pao Chicken

Ingredients:

1 Tbsp. Cornstarch
1 Tbsp. Dry Sherry
1/2 tsp. Salt
1/8 tsp. White Pepper
1 1/2 lbs. Chicken Breasts, skinned, boned, and cut in bite-size pieces
4 Tbsp. Oil (light tasting vegetable oil)
Cooking Sauce (directions follow)
4-6 Small, Dry, Hot Chile Peppers
1/2 cup Salted Peanuts
1 tsp. Minced Garlic
1 tsp. Fresh Ginger
2 Whole Green Onions, cut in 1 1/2 inch lengths
